Ingredients

  • --- FOR THE TUNA GENOVESE FILLING ---
  • Ingredient 1: Amount: 2 | Unit: cans 5 oz each | Name: Italian-style tuna in olive oil, drained Notes: Genova or Rio Mare brand strongly recommended — do not use water-packed tuna
  • Ingredient 2: Amount: 2 | Unit: tbsp | Name: Extra virgin olive oil Notes: Use good quality EVOO — it forms the base of the dressing
  • Ingredient 3: Amount: 1 | Unit: tbsp | Name: Fresh lemon juice Notes: Fresh-squeezed only — bottled lacks brightness
  • Ingredient 4: Amount: 2 | Unit: tsp | Name: Red wine vinegar Notes: Essential for authentic Genovese tang — do not substitute with white vinegar
  • Ingredient 5: Amount: 1 | Unit: small clove | Name: Garlic finely minced Notes: Fresh garlic only — garlic powder does not deliver the same aromatic depth
  • Ingredient 6: Amount: 1 | Unit: tbsp | Name: Capers roughly chopped Notes: Drain brine before chopping — the brine flavor is already in the caper
  • Ingredient 7: Amount: 2 | Unit: tbsp | Name: Red onion finely chopped Notes: Soak in cold water for 5 minutes if you prefer a milder onion flavor
  • Ingredient 8: Amount: 1 | Unit: tbsp | Name: Fresh flat-leaf parsley chopped Notes: Flat-leaf (Italian) parsley preferred over curly for cleaner flavor
  • Ingredient 9: Amount: ½ | Unit: tsp | Name: Dijon mustard optional Notes: Adds depth and very mild heat — recommended
  • Ingredient 10: Amount: ½ | Unit: tsp | Name: Anchovy paste optional Notes: Cento or Amore brand — adds umami depth without fishy taste
  • Ingredient 11: Amount: | Unit: to taste | Name: Sea salt and cracked black pepper
  • --- FOR THE SANDWICH ---
  • Ingredient 12: Amount: 4 | Unit: rolls | Name: Ciabatta rolls or Italian sandwich rolls Notes: Must be crusty rolls — soft sandwich bread will become soggy
  • Ingredient 13 Optional: Amount: ¼ | Unit: cup | Name: Giardiniera (mild or hot) Notes: Chicago-style pickled vegetables — adds authentic tang and crunch
  • Ingredient 14 Optional: Amount: ¼ | Unit: cup | Name: Roasted red peppers, sliced
  • Ingredient 15 Optional: Amount: 1 | Unit: handful | Name: Fresh arugula
  • Ingredient 16 Optional: Amount: 4 | Unit: slices | Name: Thin provolone cheese Notes: For warm melted version only

Equipment

  • Equipment 1: Name: Medium Mixing Bowl Notes: For combining and resting the tuna Genovese filling
  • Equipment 2: Name: Fork Notes: For flaking tuna — do not use a spoon or hands; fork preserves chunk texture
  • Equipment 3: Name: Sharp Knife and Cutting Board Notes: For mincing garlic, chopping capers, red onion, and parsley
  • Equipment 4: Name: Oven or Toaster Oven Notes: Toast ciabatta rolls at 375°F for 3–4 minutes until golden outside, soft inside
  • Equipment 5: Name: Panini Press or Skillet (optional) Notes: For the warm melted provolone variation — press 1–2 minutes until cheese melts
  • Equipment 6: Name: Citrus Juicer Notes: For squeezing fresh lemon juice — bottled lemon juice is not recommended

Method

  1. Step 1: Flake the Tuna Drain the canned tuna but do not rinse it — the olive oil clinging to the tuna is part of the flavor. Add it to a medium bowl and flake gently with a fork, leaving some larger chunks intact. Do not mash into a paste — texture is essential to this sandwich.
  2. Step 2: Add the Dressing Pour the extra virgin olive oil, fresh lemon juice, and red wine vinegar directly over the flaked tuna. Stir gently just until the tuna is evenly coated and glossy. The mixture should look rich and slightly shiny — not wet or pooled with liquid.
  3. Step 3: Build the Flavor Fold in the minced garlic, chopped capers, finely chopped red onion, and fresh parsley. Add the Dijon mustard and anchovy paste if using. Fold gently — the goal is even distribution while keeping the tuna textured. Season with sea salt and cracked black pepper to taste.
  4. Step 4: Rest the Filling Cover the bowl and refrigerate for 10 to 15 minutes. This step is important — the resting time allows the garlic, capers, and vinegar to meld into the tuna and develop the deeper, more complex Genovese flavor. Do not skip it.
  5. Step 5: Toast the Bread Slice the ciabatta rolls lengthwise and lay them cut-side up on a baking sheet. Toast in the oven at 375°F (190°C) for 3 to 4 minutes until the cut sides are golden and slightly firm. The outside should be crisp but the inside should still be soft and tender.
  6. Step 6: Assemble the Sandwich Spread optional garlic aioli or Dijon mustard on the bottom half of each toasted roll. Scoop a generous portion of the tuna Genovese filling and spread evenly from edge to edge. Layer with giardiniera, roasted red peppers, or arugula as desired. Add provolone for a warm variation and press briefly in a panini press or covered skillet for 1 to 2 minutes.
  7. Step 7: Serve Cut each sandwich in half diagonally and serve immediately. For best results, serve within 5 minutes of assembly while the bread is still warm and crisp.

Notes

TUNA CHOICE: Olive oil-packed Italian tuna is non-negotiable for authentic flavor. Genova Yellowfin Tuna in Olive Oil and Rio Mare are the two best readily available brands. Water-packed tuna produces a dry, flat result.
ANCHOVY TIP: Do not skip anchovy paste if you want the full Buona-style depth. Half a teaspoon adds savory complexity that most people cannot identify directly but immediately notice when absent.
MAKE-AHEAD: Tuna filling can be made up to 2 days in advance. Store in an airtight container in the refrigerator. Stir gently before using. Do not freeze.
MEAL PREP: Store filling and bread separately. Assemble fresh at each meal for best texture. Toast bread fresh each time.
MOISTURE BARRIER: If adding giardiniera or roasted peppers, place a layer of arugula or provolone directly against the bread first to prevent oil from soaking through.
GLUTEN-FREE: Use gluten-free ciabatta or seeded rolls. The filling is naturally gluten-free.
DAIRY-FREE: Recipe is naturally dairy-free — skip the provolone option.
WARM VERSION: For a melted provolone variation, add cheese after assembling and press in a panini press or covered skillet for 1–2 minutes over medium heat.
