- Step 1: Cook the Pasta Bring a large pot of generously salted water to a boil. Add pasta and cook to al dente per package directions. Before draining, scoop out 1 cup of pasta water and set aside. Drain pasta and set aside.
- Step 2: Sear the Mushrooms Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced mushrooms and ½ teaspoon salt. Let cook undisturbed for 2 minutes to develop a golden crust, then stir and continue cooking 3 to 5 minutes total until deeply browned. Remove from skillet and set aside.
- Step 3: Cook the Asparagus In the same skillet over medium heat, add 2 tablespoons water and the cut asparagus. Season with ½ teaspoon salt. Cook, stirring frequently, for 4 to 5 minutes until asparagus is bright green and crisp-tender. Do not overcook — it should still have a slight bite. Remove and set aside with the mushrooms.
- Step 4: Build the Garlic Cream Sauce Reduce heat to medium-low. Add the remaining 2 tablespoons olive oil to the skillet. Add minced garlic and sauté 1 minute until fragrant. Pour in the half-and-half and bring to a gentle simmer. Cook 3 to 4 minutes, stirring occasionally, until slightly thickened.
- Step 5: Add Cheese and Seasoning Reduce heat to low. Add grated Parmesan gradually while stirring continuously until the sauce is smooth and creamy. Stir in dried oregano, thyme, red pepper flakes, lemon juice, and lemon zest. Taste and adjust seasoning with salt and black pepper.
- Step 6: Combine and Toss Add the drained pasta, seared mushrooms, cooked asparagus, and sliced roasted red pepper to the skillet. Toss everything together until evenly coated. If the sauce is too thick, add reserved pasta water one tablespoon at a time until you reach the right consistency.
- Step 7: Garnish and Serve Divide into bowls and top with extra grated Parmesan, a pinch of red pepper flakes, and fresh chopped basil. Serve immediately for best texture and flavor.
Notes
PASTA WATER: Always reserve at least 1 cup of pasta water before draining. The starch helps bind the sauce to pasta and is the best tool for adjusting consistency.
MUSHROOM TIP: Do not wash mushrooms under running water — wipe with a damp paper towel. Wet mushrooms steam instead of sear and lose all their golden depth.
ASPARAGUS TIP: Cook only until bright green and crisp-tender — overcooking turns it dull and mushy. Thin stalks: 3 minutes. Medium stalks: 5 minutes. Thick stalks: 6–7 minutes.
STORAGE: Refrigerate in an airtight container for up to 3 days. Reheat on the stovetop over low heat with a splash of pasta water or milk to loosen sauce. Do not freeze (cream sauces separate).
VEGAN: Replace half-and-half with full-fat coconut milk or oat cream. Use nutritional yeast or vegan Parmesan instead of dairy Parmesan.
GLUTEN-FREE: Use gluten-free penne or rigatoni. Check package cooking time as it may differ from regular pasta.
PROTEIN ADD-IN: Add grilled chicken strips, sautéed shrimp, or flaked salmon in Step 6 with the vegetables.
RICHER SAUCE: Substitute heavy cream for half-and-half, or add 2 tablespoons cream cheese to the sauce in Step 5 for extra richness.
ROASTED RED PEPPER: Jarred roasted red peppers work perfectly — just drain and pat dry before slicing. For homemade, broil whole red bell peppers at 450°F for 10–12 minutes, steam covered for 10 minutes, then peel.
